Tripe is the common term used to refer to the stomach of ruminating (grazing) animals including cows, buffalo and sheep. The Sioux of the Great Plains were known to boil buffalo meat and wild herbs with heated rocks in a buffalo paunch... afterwards, they ate the paunch too. Tripe was so revered in European culture that it spurred a tiff between William the Conqueror and Phillip I, the King of France.
